What is Egg Shelf Life?
Egg shelf life is the length of time an egg remains fresh, safe, and suitable for consumption under proper storage conditions. Egg shelf life is inversely related to TPC (Total Plate Count)/APC (Aerobic Plate Count): the lower the TPC, the longer and safer the egg remains fresh; the higher the TPC, the faster it spoils. Think of TPC as the “bacterial load meter.” Globally, food safety standards/authorities & import/export customs rely on TPC. Eggs that are black and rotten have a TPC greater that 100,000 cfu/g.
